Introduction:
We will start our dry-runs for Bay Area Science Festival [Food Theme]; Write all topics/ideas on board; Begin to write the procedures for the experiments.

Maillard Reaction***
What is a “maillard reaction”? A chemical reaction between an amino acid and a reducing sugar, usually requiring additional heat that creates flavor and changes the color of food.

Cranberry Juice (Anthocyanin allows change of color when reacted with an acid or base)
Base: Baking Soda
Buffer: Water
Acid: Lemon
Teaspoon
3 bowls
Procedure
Fill ⅓ cup of Cranberry juice in three separate bowls.
With a teaspoon of Lemon fill one bowl and observe reaction
With a teaspoon of Baking soda fill one bowl and observe reaction.
With a teaspoon or cup of water fill one bowl and observe reaction
