Introduction:

We will start our dry-runs for Bay Area Science Festival [Food Theme]; Write all topics/ideas on board; Begin to write the procedures for the experiments.

Here is the list for all (4) we have chosen today. However, for each lab experiments we need a Project Manager, Recorder, and Supporter ---

Maillard Reaction***

What is a “maillard reaction”? A chemical reaction between an amino acid and a reducing sugar, usually requiring additional heat that creates flavor and changes the color of food.

  • Supplies: bread, panini / milk cheese

Cranberry Juice (Anthocyanin allows change of color when reacted with an acid or base)

Base: Baking Soda

Buffer: Water

Acid: Lemon

Teaspoon

3 bowls

Procedure

  1. Fill ⅓ cup of Cranberry juice in three separate bowls.

  2. With a teaspoon of Lemon fill one bowl and observe reaction

  3. With a teaspoon of Baking soda fill one bowl and observe reaction.

  4. With a teaspoon or cup of water fill one bowl and observe reaction
